Medu bada (Urad dal bada)

 It's a very easy and tasty dish. it is eaten all over India But most popular in south India.


Medu bada (Urad Daal bada)

Ingredients:--

For vada

2 cup urad dal, soaked overnight

2-4, Green chillies, chopped 

2 TBSP coriander leaves chopped 

1 TBSP Ginger, finely chopped 

1 Spring curry leaves, chopped

1/2 cup fresh coconut pieces, chopped

5-10 black peppercorns, crushed 

salt to taste.

oil for deep frying

water


Ingredients for Coconut Chutney

1/2 cup fresh coconut, grated

1 TBSP roasted chana daal

2 Green chillies

salt to taste 

1 TSP roasted cumin seeds

4-5 curry leaves

1/2 inch ginger slice

2-4 Ice cube 

Water as required

For tempering:--

1/2 TBSP coconut oil 

1/2 tsp Mustard seeds

2 dry red chillies

1/4 tsp Asafoetida

1 Spring curry leaves

First of all, we take 2 cups of urad dal soaked up overnight. Then grind it in a mixer, and if needed add some water, but the consistency of batter must be thick . Later on, mix it properly with your hand for 5 minutes. You will see that the batter of Urad dal becomes fluffy, air fills inside it. Then, we put all ingredients, which listed above and mix properly.

And this is the time for making chutney:--

All ingredients are listed above for making chutney, ( Note:--ice cube is optional because sometimes coconut releases oil and we add ice to prevent that)we grind properly. Keep it in a bowl.

Now we tempering (chakra) chutney.

Put the pan on the stove, add 1/2 tbsp coconut oil, heat it well then add all ingredients one by one. When it starts to make a cracking sound, then put chutney into it. You can smell their fragrance. Your chutney is ready.


Now, it's time to heat the pan and pour the oil into the pan for deep frying.

Now we will wet our hands with water (because the batter did not get stuck in our hand) and take approx 1 tbsp of batter on the hand, give it a shape of a doughnut and gently put it in hot oil, keep it medium flame. We will fry it till half cooked, somewhat till we get a golden colour. When we are finished frying vadas of all batter at the end we will again fry those vadas once more and this time will it turns golden brown. This will make them more crunchy.


Serve it along with chutney or sambhar.
